Native to India, the lemon tree is a hybrid species of the Rutaceae family, a cross between citron and bitter orange. It is cultivated in the Mediterranean Basin and in subtropical regions for its fruit. The tree can reach a height of 4 to 5 meters at maturity. Its fruits have a sour pulp and a peel containing an oil with a powerful scent. As with all citrus species, its essential oil is obtained by cold pressing the outer zest of the peel.
